This Mexican food is spicy, tangy, hearty and incredibly moreish. Plus, by switching out tortillas for Lo-Dough, you can drastically reduce the calories of the meal and utterly decimate the carb content.  

You'll want plenty of lime, chilli and coriander in the larder, as well as some smokey paprika and cumin to flavour up your sauces/fillings. Beyond that, check out the recipes for specifics.

Low-Calorie Enchiladas

Low-calorie, low-carb, high-fibre & ridiculously tasty - this enchilada recipe, made with Lo-Dough, has it all! It's ready in under an hour and is pretty much the perfect weekend recipe! In can be scaled up or down very easily, so could easily become a family meal. This recipe is written for 2 pieces of Lo-Dough, but you can easily adjust for more if needed.

In this case, we have gone with chicken and veg - red and yellow peppers, mushrooms and onions, but it's really just a case of putting in whatever you happen to like. 

There are a fair few ingredients on the list, but it's still a reasonably simple recipe to make and the finished dish is totally worth the effort... trust us! 

Recipe serves 2 (or 4 if doubling up as we did!)

Nacho's are a great, simple snack food - perfect for parties or nights in front of the TV. Using a few simple shop-bought ingredients, this can be thrown together in minutes, or you can go to town and make your own chilli and other sides and make this something of a main event - the choice is yours.

Done the Lo-Dough way, the calories are halved from that of any shop bought equivalent, with the added bonus of being high in fibre and therefore filling and satisfying. As far as carbs go, low-carb Lo-Dough hits it out of the park. 

The nutritional info is for 1 piece of lo-dough, served as nachos, with chilli con carne, cheese, guacamole, sour cream and salsa!

Low calorie chipotle chicken pizza

Low-Carb Chipotle Chicken Pizza

The Low-Carb, High-Protein Pizza With A Mexican Flavour Twist.

The twist here is magical chipotle paste. If you haven't come across it before, you're gonna thank us for this. Chipotle is a pepper that has been dried in smoke. They are used in a number of Mexican and Mexican-inspired dishes and their unique smokiness is desirable and very moreish. For home cooking, the best way to get hold of this flavour is via a paste, readily available in most supermarkets. 

Here we have used it as part of the base sauce for a low-carb pizza and to dress up some chicken to go on top. The result is as described above, smokey, spicy and totally addictive.
