A Low Calorie, Tropical Taste-Explosion

This tropical twist on french toast, using coconut milk and egg as the soaking mixture (as well as beautiful, vitamin-rich mango and pineapple) will brighten up any morning, whatever the weather. 

The egg and coconut mixture is sweetened slightly and then combined with extra grated coconut to add further flavour and texture. The fruit on top is dressed in a little lime juice and zest, which actually emphasise their sweet flavour. It pretty much goes without saying that the combination is perfect and by using Lo-Dough as your bread replacement, you can enjoy all the flavour, but with a huge reduction in calories. Also thanks to Lo-Dough and the various fruits, this dish is also incredibly high in fibre - offering nearly half your daily recommended intake in one meal!

Low Carb French Toasts

Note: If you were following a low carb diet, most of the carbs on this dish come from the fruits, which have various other great nutritional upsides and are an important part of a healthy diet - if you are going to have carbs, this is the way to have them! 

 

Ingredients

  • 1 piece of Lo-Dough, cut into quarters
  • 1 small egg, beaten
  • ¼ of a tin of light coconut milk
  • 10g Sukrin sweetener (or any sweetener of your choice)
  • ½ teaspoon of cinnamon
  • ½ teaspoon of nutmeg
  • 10g of grated coconut flesh (desiccated coconut would also work)
  • 50g of pineapple, chopped into chunks
  • 50g of mango, chopped into chunks
  • The zest of a lime
  • The juice of half a lime
  • Spray oil/butter

Method

  1. Add the eggs, sweetener, coconut milk and spices to a bowl and mix well with a fork. When combined, add your Lo-Dough.
  2. Leave this mix in the fridge for a minimum of 1 hour, for the Lo-Dough to absorb the liquid. Before removing, sprinkle with the grated coconut flesh.
  3. On a very low heat, add the spray oil/butter and gently until golden brown.
  4. in another bowl, dress the fruit with the lime juice and lime zest.
  5. When cooked, move onto a plate and top with the fruit. You can also dress this dish with extra coconut shavings, maple syrup, coconut ice-cream - anything you like really. Think tropical!
