Coffee & A Low-Calorie Brownie? Don't Mind If We Do!

The perfect coffee-morning cake to have with your cup of joe is surely a coffee cake of some sort? Well, by adding a few spoons of instant coffee to your Lo-Dough Brownie Mix and chocolate coating, what you get are the most amazing mocha-coffee flavoured, low-calorie brownies. A little coffee is often added to traditional recipes to boost the chocolate flavour, giving a richer taste. In this case, we are going slightly further to try and add the bitter, rich taste of coffee to the brownie.  

Low-Calorie Brownie

Making your Low-Calorie Brownies

Make the Lo-Dough Brownie Mix as per the packet instructions and then stir through 3 teaspoons of instant coffee powder before adding to your lined tin. Bake for 25 minutes at 190C. Allow to cool (as per the instructions) and then cut into 9 portions. Once cool, melt approx. 50g of white chocolate in the microwave (break into small pieces and heat in 30-second blasts, stirring between each one. While the chocolate is still hot, stir in a teaspoon of instant coffee powder and stir well.  Drizzle over your brownies in a fine stream and then allow the chocolate to cool and set. They are now ready to serve.

Store in a sealed container in the fridge for up to 5 days.

Method

  1. Make the Lo-Dough Brownie Mix as per the packet instructions.

  3. Add the mix to your lined tin and bake for 25 minutes at 190C.
  4. Allow to cool (as per the instructions) and then cut into 9 portions.
  5. Melt approx. 50g of white chocolate in the microwave (break into small pieces and heat in 30-second blasts, stirring between each one. While the chocolate is still hot, stir in a teaspoon of instant coffee powder and stir well.
  6. Drizzle the coffee/chocolate over the brownies in a fine stream and allow the chocolate to cool and set. Serve.
