The ultimate low-calorie cake treats. Perfect for parties and great for kids (and big kids)!

Our cake-lollypops are mini bites from heaven. Low-calorie cake enveloped in a thin coating of your favourite chocolate and served on a stick. All you need is the mould—we found ours in a supermarket for under 5 pounds (the mould came with the sticks).

This recipe is made for sharing with family and friends and brilliant, messy fun to put together with the kids.

A whole vanilla sponge mix makes 28 semi-spheres, which fit together to make 14 cake lollipops, so perfect for sharing!

If you are keeping an eye on calories, or sugar consumption and still looking for a sweet treat, this is the perfect way to go.

Ingredients

Serves 14
  • 1 Lo-Dough vanilla sponge mix
  • 240g of water
  • 90g chocolate

Method

  1. Preheat the oven to 180C/356F. Make up the Vanilla Sponge Mix according to the packet instructions.
  2. Spoon and fill your cake-pop mould - each semi sphere should hold approx. 10g mix = you are making 28 semi-spheres in total. Place in the oven and bake for 25 minutes.
  3. Once cook, remove and cool. Pop out from the moulds and sandwich pairs of semi-spheres together using a level teaspoon of creme fraiche as glue. Place a stick through each completed lollipop and dunk in the melted chocolate, letting as much excess drip off as possible.
  4. Set in the fridge and once the chocolate is hardened, serve.
